Ifan grew up on the family farm in Llanelltyd, North Wales. His passion for cooking evolved through working in local restaurants around Dolgellau. He moved to Cardiff in 1997 to continue to develop his skills as a chef, winning Welsh Young Chef of the year, achieving AA best Restaurant in Wales and presenting a weekly cooking slot on welsh television (S4C)
After ten years developing his catering skills in Cardiff Ifan, with the help of his brother Will decided to open his own restaurant on the family farm in Llanelltyd. The work of transforming a farm outhouse into Mawddach Restaurant was completed in 2007.
Ifan now works as head chef at Mawddach Restaurant with brother Will running front of house as Restaurant Manager. Ifan's Menu emphasises the use of fresh, locally sourced, seasonal produce including Welsh lamb reared on the family farm. Produce including Beef, Pork, Fish and Game are sourced through a network of local suppliers.
